Food!

Today post is all about food,...well perhaps other things will sneak in there too! lol! Today I am making my first ever attempt at making Chinese food from scratch at home, we shall see how this turns out, hopefully yummy! My whole life i hated Chinese food, if my family ordered it i would get a burger or toast, anything but Chinese food, but when i was pregnant i developed a taste for it and now i love it! SO tonight i am making baked sweet and sour chicken and fried rice! Sounds good, my mom is coming for dinner so i will have a taste tester as Joe will be at work, I am making my rice right now as I was told older rice is better for fried rice. This morning for lunch I made yummy "Soucy" eggs Benedict, my Dad never did come up for a name for this breakfast dish, so that is what we have always called it, you start with home made bread toasted top it with butter or cheese, then raw onions on top of that you add your fried egg and then top with home made canned tomatoes, trust me it is to die for! Plus it looks beautiful on a plate so it is a great breaky for company! This afternoon I will be making sunset gourmets brownies, i will let you know how they turn out! Here is the recipe for the Chinese Chicken: Baked Sweet and Sour Chicken The chicken coating: 3-4 boneless chicken breasts salt + pepper 1 cup cornstarch 2 eggs, beaten 1/4 cup canola oil The sweet and sour sauce: 3/4 cup sugar 4 tbs ketchup 1/2 cup distilled white vinegar 1 tbs soy sauce 1 tsp garlic salt Start by preheating your oven to 325 degrees. Rinse your chicken breasts in water and then cut into cubes. Season with salt and pepper to taste. Dip chicken into the cornstarch to coat then dip into the eggs. Heat your 1/4 cup oil in a large skillet and cook your chicken until browned but not cooked through. Place the chicken in a 9x13 greased baking dish. Mix all of your sweet and sour sauce ingredients in a bowl with a whisk and then pour evenly over the chicken. Bake for one hour and during the baking process you will need to turn the chicken every 15 minutes. Below is the greatness you will get when it's all cooked:
and here is the fried rice recipe: Fried Rice 3 cups cooked white rice (day old or leftover rice works best!) 3 tbs sesame oil 1 cup frozen peas and carrots (thawed) 1 small onion, chopped 2 tsp minced garlic 2 eggs, slightly beaten 1/4 cup soy sauce On medium high heat, heat the oil in a large skillet or wok. Add the peas/carrots mix, onion and garlic. Stir fry until tender. Lower the heat to medium low and push the mixture off to one side, then pour your eggs on the other side of skillet and stir fry until scrambled. Now add the rice and soy sauce and blend all together well. Stir fry until thoroughly heated! **You could really play around with this rice too! Try adding some diced ham, or green onion :) Yum!
I never got a chance yet today to make Kenzie's craft but i think instead we will have some mommy daughter time after supper tonight, just me her and ELF and of course popcorn lol! I'm not a fan of popcorn but she sure is! I love to give her treats once in a while, she sure appreciates them and lastly here comes my non food portion of this post, I made some center pieces for my house today and they turned out beautiful, i love them, special thanks to my hubby for going out and getting me some beautifully green spruce branches! And here is how they turned out :)
when the center pieces where done i made some potpourri to make the house smell homey and delicious, here is what i used for the potpourri, an orange, a few sprigs of spruce tree, cinnamon, ginger and cloves, it smells like Christmas in here and also a little like candy lol! Hope you all have a great day! credit for the chicken and rice recipes goes to pinterest

Good Morning people! Hope everyone's day has started off right, mine had, but quickly turned on me lol! The wonderful news was I got to sleep in, i feel human again! Yesterday Hubby got to sleep in so i guess today was my turn, on the other hand as soon as I did wake up our Jeep had to be hauled off to the mechanic, we just invested almost 500$ in the Jeep a couple weeks ago and now it looks like we will have to dish out again,..grrr! Oh well, at least we are blessed with a vehicle to drive, we need to take good care of her as we sure drive a lot, this next week alone Joe has work, we have a Dauphin trip a Brandon trip and a Winnipeg trip! So i guess we better figure out what is wrong, the cruise control stopped working and the car is shaking like crazy, we shall see! But a simple joy was brought to me this morning in the form of the new cheese magazine, yes such a thing exists and i always enjoy magazine's :) We also got the Black Friday flyer, ohhh we found a few good deals and early morning trip is planned to cash in on those deals!! We are looking into getting Netflix and I am super excited about it, so much to watch so little time! LOL! So this means Joe and I will be selling off a large section of our massive movie collection! It will make more room in the living room too! Today the plan is to do something crafty and figure out what the heck is going on with that car of ours. I really shouldn't complain, we have had the Jeep for almost 3 years and have only had to invest money in her 3 times, not counting the many oil changes Joe insist's on,..it's good for the car, yes yes blah blah! I am looking forward to the snow that is supposed to be on the way! Sleigh bells ring, are you listening! Can you tell i have a touch of the A.D.D. lol! Enjoy your day people, I think this will be a popcorn and movie kind of day, with hopefully some cheap news from the mechanic to boot! And a little snow fall would really top it all off!

Hi there everyone! Thanks for tuning in today, this blog will be all about our busy weekend, it started out in Treherne, with a nice visit with my Dad and Lynn and some awesome food, they of course spoiled their grand daughter, buying beautiful gifts for her and they even got her her own birthday cake with 3 beautiful candles, oh it is the little things in life! She loved it, they bought her oranges and candies and chocolate milk, the kid was in spoiled grandchild heaven! Dad and Joe hunted when they could but never nailed anything, hopefully Dad will have a chance to keep trying but we did bring them the backs traps of our deer to hold them over! :) #1 Daughter and Son in law over here LOL! I spent a good portion of Saturday being a computer tech, and thankfully i fixed all their issues, say it with me Lynn "when the computer says to update, i will no longer hit ignore!" LOL! Sunday Dad and Lynn treated us to breakfast and Dayner's Diner, the restaurant Lynn owns, it was awesome and we had a great time, you should all stop in there when you are in Rathwell, MB. After that we drove home and Kenzie and I slept most of the way home! YAY! Unfourtunatly for Joe he did not get to sleep and the cruise control broke, another trip to Riverside is in our future :( we like to visit our mechanics but not when it costs us money lol! pLUS WE JUST PUT 430$ INTO OUR CAR LAST WEEK, SHOULDN'T THE NEW PARTS TELL THE OLD PARTS "DON'T FALL APART ANYTIME SOON, THEY JUST INVESTED MONEY IN ME!!?" opps caps lol! We came home and baked Pumpkin Pies for the Fall Supper and headed there early to work our shifts My pies were a major fail as i had just pulled them out of the oven and topped them with fresh whipping cream which soon turned to milk, oh well, they still would have tasted delicious! The supper was awesome and there sure seemed to be alot of people there! Hopefully we raised alot of money for the hall :) the silent auction was amazing almost 40 prizes! Hopefully we won something, we weren't able to stick around as we had the McCreary Mustangs first home game to go to! we where up 3-0 in the 1st and then ended up losing in the third 7-5 ouch, oh well guys we will get the next one! Alot of familiar faces in those jersey's happy to see so many back from last year and it was nice to see some newbies on the ice too, even our very own Devon Soucy, we had a great time cheering them all on! We had a very busy but awesome weekend! It was nice to see all of you! And for today, we will be working on somemore Winter Crafts, as some of you may or may not know, McKenzie does not go to daycare, so it is our responsibilty to make sure she learns all the skills nessesary to prepare her for Kindergarten, hopefully i am a good teacher I certainly have a great student! So my New Years resolution is to do a craft with her almost everyday and i am just getting a head start on that! I am loving watching her learn new things! I just go on Pinterst on use google and find all kinds of age apporpriate crafts for her to try, lovin life over here! I am all out of sugar so I can't tackle any Christmas baking, a trip to the store for some sugar will be in order!! Until the next time my friends!!

Thursday 15 November 2012

Well I won't be able to blog for a few days as we are taking off on a hunting/visiting holiday at Dad and Lynn's but I just wanted to post and let you all know how things went today, first off Kenzie's snowman turned out so cute, this is my kinda snowman the kind you don't need to go out doors in the cold to build! Kenzie's to the left mine to the right, I always try to do the craft along side her, so i can give her an idea of what the project is meant to be, with out touching her project.
Then i tackled my first ever batch of buns, they turned out awesome, i highly reccomend even virgin bread bakers give these a go, and veteran bread makers will love to gobble these up too! Beautifully browned and buttered, how can you go wrong?! Loves it!
Buttery Dinner Rolls The ingredients you will need: 1 1/2 cups of milk 3/4 cup + 1 Tablespoon Sugar 1 egg 1 Tablespoon salt 2 Tablespoons yeast 2 cups of warm water about 9-10 cups of all-purpose flour at least 1 cup of butter To start out: Scald 1 1/2 cups of milk, 3/4 cup sugar and 1/2 cup of butter, in a microwave safe bowl, for about 2 minutes. Cutting the butter into pieces helps it melt faster. There will probably be some little cubes of butter still floating in the hot mixture, they will melt. We are going to add yeast to this hot mixture, but it will be too hot to just dump the yeast straight in (it would kill it!). To cool it down stir in 1-2 cups of flour, then add 1 egg and 1 Tablespoon of salt, and leave it to cool for a couple of minutes. Meanwhile, in a measuring cup dissolve 2 Tablespoons of yeast in 2 cups of warm water and 1 Tablespoon of sugar. Let it sit for a couple of minutes until it is bubbly. **Keep track of how much flour you are adding!!! Make sure your milk mixture is just warm, not boiling and add the yeast mixture! Using a fork or wooden spoon, gradually stir in 9-10 cups of flour (counting the flour you have already added to cool it earlier). I would recommend only adding 2 cups at time and stirring in between. These rolls turn out so much better when they are mixed by hand. At the end the dough will be dense and sticky, and may be hard to stir, you can use your hands to incorporate the rest of the flour if needed. Be sure not to add too much flour. Then smooth the dough out and cover the bowl with plastic wrap. Leave it in a warm place and let it rise. When your dough is close to rising completely, butter 2 cookie sheets and set them aside. Let the dough rise until it has doubled in size. Cover your working space with flour to prevent the dough from sticking. Dump your dough out and divide it into 4 balls. Eyeball the sizes, then lift them up and feel the weight of each ball. Try to make them even, but they don’t have to be perfect. Using one ball of dough at a time: roll the dough into a circle on a floured counter. Once it is rolled out spread the top with butter from edge to edge. You will use about 2 Tablespoons per circle of dough. Cut the dough into quarters using a pizza cutter. Then cut each quarter into 3 pieces. You should end up with 12 triangles from each circle of dough. you will roll the dough starting with the wide end of the triangle. Tuck the tail of the triangle under the roll and place it on the buttered cookie sheet. You will make 3 rows, with 8 rolls per row. This will give you 24 rolls per pan. Two balls of dough will fill 1 pan. You will get a total of 48 rolls! Pre-heat your oven to 350 degrees. Place the pans of rolls in a warm place (on top of the oven if possible) to let them rise. Once they are touching and full in size, cook (one pan at a time) in the oven ’till they are golden brown. About 10 – 15 minutes, It may take longer depending on how hot your oven cooks. Keep a close eye on your first pan to get the right time for the second. While they are still hot and fresh out of the oven run a stick of butter over the tops of the rolls for a delicious buttery glaze. These yummy dinner rolls will be a hit at any event, Enjoy! I found this recipe at www.pinterest.com and howdoesshe.com I am off to pack my bags for Trehern as tomorrow I have to drive to Dauphin and pick up all of the items I have won or sold on The Parkland Bidding Wars, then to Gilbert Plains to pick up our new living room chair, then off to Trehern, we return on Sunday, we have to hurry home in time for the Laurier Fall supper, I am bringing Pumpkin Pies with real whipped cream and we will each work a shift then quickly eat supper, because we have our first Mustangs game (hockey) NCHL at 6pm, then we can relax, enjoy the game and hopefully win the game too! And lastly i leave you with a little tid bit of advice for all the parents out there, when your kids reach the age where they no longer want to hug and kiss, bribe them, you want a snack? some supper? glass of milk? kiss me, hug me, healthy parenting starts with bribery! LOL! p.s. I totally got away with not helping wrap the deer! LOL! (so far,...the nights not over yet)

November 15th

While I know nothing about blogging i figured why not give it a shot, I find myself constantly holding back posting things on facebook so my friends don't find me annoying, but perhaps here I can be as annoying as I want, post all the pictures of my daughter I want, take pictures of my food all i want and of course share the recipes, maybe this will be good for me, therapeutic even, to get all my smart alec comments out of my brain and into a blog for all my friends and family and followers to see and hear, so here we go, let's start, hopefully you will all like my blog, my plan for this blog is to give you an idea of what my day to day life is like, and to be honest I am spoiled, and i love it! I am blessed enough to get to be a stay at home Mom, most days this is the best job ever, some days i would love to run for the hills and get my old job back as a Home care worker, today however is a good day at home, yesterday,...was not lol! Today my daughter and I will be making a snow man winter craft, commbine a paper plate and some construction paper and boom, you got a craft! Then once the little one is all tucked into bed, that is when i get to work, today I am attemping yet another Pinterest recipe, "Delicious Dinner rolls" they look awesome and it makes a huge batch so i can freeze some for all the yummy home made soups i will be making leading up to Christmas, I will let you know how they turn out, because i usually don't make buns my hand, all my bread is done in the bread maker! When my hubby Joe gets home he will be cutting and wrapping the deer he got earlier this week, I am looking forward to hopefully getting away with not helping him at all! LOL! We shall see! We also have to pack tonight because tomorrow we head out to my Dad and Lynn's for a few nights, so my hubby can hunt out there as well. Well wish me luck with this blog and the rolls, I will post some pics, i think I will be doing that alot on here! And to start things off here is a pic my 3 year old took of our Christmas tree this morning and yes all our gifts are bought and wrapped under the tree, cause i'm awesome like that! LOL!
